Eat better, not less. If you love pasta but still want to eat healthily, the alternatives have bordered on pathetic ... until lately. Our Mac&Cheese recipe with a new kind of protein-packed pasta, made from only beans, tastes delicious and is a thousand times healthier than your regular Mac&Cheese meal!
Total: 25min, Yield: 2 servings
13 oz potatoes, peeled, diced
5 oz carrots, peeled, diced
1/2 cup water
0.7 oz yeast flakes
2.5 oz olive oil
1 tbsp. lemon juice
1/2 pack Edamama Azuki Bean spaghetti
Salt, pepper, garlic powder, chia seeds
With this recipe, we replace the calories- and fat-packed cheese sauce with a clean & light sauce made from potatoes and carrots. Also, we switch traditional pasta with a more healthier pasta alternative that is made from 100% beans. This pasta claims to contain 4 times less carbs than traditional pasta and comes with a lot of health benefits. They are called 'Edamama' and come in four different bean sorts:
Traditional pasta contains a lot of unhealthy carbs that, when eaten, your body turns into sugar immediately. Your blood sugar level rises and shortly after, you're feeling the urge to eat again - although you've just had a meal.
Instead, beans are incredibly nutritious and contain a combination of slow energy-releasing and naturally high amounts of fiber and protein. Thus, they keep your body fueled longer and satisfy your appetite.
The result? One naturally loses weight, without feeling hungry. The nutrition facts show incredible 69% protein (Edamama pasta on the left, traditional pasta on the right):
Where to buy it? The pasta can be found at markets like Fairway. However, although a single package feeds up to 3 people, it comes close to 5 bucks. A smarter way (since way cheaper) is to purchase online since you can get pasta boxes that contain all four sorts - the Azuki bean sort as well (used for this recipe).
